What is Carrageenan and is it safe?

Carrageenan is an extract of various species of red seaweed and has been used for hundreds of years as a thickener in foods.  There have been recent consumer concerns about its safety, however, we have done our research and are confident in our choice to use carrageenan.  We use only food grade carrageenan, not the degraded, poligeenan, that has received the bad reputation.  You can read more about the research that we have conducted by checking out our article, ‘Is Carrageenan Safe?’.

What is the shelf life of Vegan Gourmet® Cheese?

The shelf life of Vegan Gourmet® Cheese is 120 days unopened and about 3-7 days after opening. To extend the shelf life, the cheese can be frozen after being shredded. Shredding before freezing helps maintain the cheese's texture and melting ability when thawed. We do not recommend freezing the whole blocks as the texture changes and becomes softer (not as good for slicing and shredding).

YES, Vegan Gourmet® Cheese contains no casein or whey (milk products), and in fact no animal products of any kind.

Does your Vegan Gourmet® cheese really melt?

Yes, it really melts! Just preheat your oven to 450* if you are cooking in the oven (if you are cooking a casserole at another temperature and you want to melt cheese on top just cook it covered and when it's almost done put it under the broiler for a few minutes.) Vegan Gourmet® also melts great on the stovetop or in the microwave.

Vegan Gourmet® is currently available nationwide, although not all stores carry it yet. Are the calcium lactate and lactic acid in Vegan Gourmet® Cheese dairy free?

Yes, all ingredients in the Vegan Gourmet® Cheeses are completely dairy free and vegan. The lactic acid and calcium lactate are both derived from the fermentation of sugars from non-dairy sources and contain no dairy lactose.
