Vegan Tlayuda (Mexican Pizza)

INGREDIENTS

Easy Crema

  • ½ cup Follow Your Heart Original Vegenaise
  • 3 tbsp lime
  • ½ tbsp salt
  • ¼ tbsp cumin
  • 2 tbsp water

Chorizo

  • 1 package extra-firm tofu, frozen overnight and thawed
  • 3 tbsp plant-based butter
  • Chorizo Seasoning
    • 1 tbsp cumin
    • 1 tbsp coriander
    • 3 cloves, crushed
    • 1/8 tsp cinnamon
    • ½ tsp oregano`
    • 1 tbsp garlic granulated
    • 1tbsp salt
    • ¼ tbsp pepper
    • 1tbsp sweet paprika
    • 1tbsp hot paprika
    • 2 tbsp ancho chili powder
    • 2 tbsp apple cider vinegar
    • 1 tbsp nutrition yeast
    • 2 tbsp soy sauce

Cheese

  • 1 cup Follow Your Heart Dairy-Free Finely Mozzarella
  • ½ cup Follow Your Heart Dairy-Free Feta Crumbles
  • 2 tbsp crushed garlic
  • 1 tbsp plant-based butter

Quick Black Beans 

  • 1 – 15oz can black beans
  • ¼ diced onions
  • 1 garlic clove, crushed
  • 1 bay leaf
  • 2 tbsp cumin
  • salt to taste
  • 1 tbsp plant-based butter
  • Dash of soy sauce
  • Dash of white vinegar

Extras

  • sliced heirloom tomatoes
  • Haas avocado
  • sliced green onions
  • Follow Your Heart Dairy-Free Grated Parmesan
  • Large burrito tortilla

INSTRUCTIONS

  1. Preheat oven to 350ºF, then place the tortilla on a baking sheet for 5-10 minutes or until toasted. 
  2. Combine all seasonings with a mortar and pestle until fine, then add to the crumbled tofu. Mix until incorporates then pan-fry in a skillet with 3 tbsp melted butter for 15 minutes on medium heat.
  3. For the beans, sauté onions until translucent then add garlic, mix thoroughly then add spices and beans. Combine the remaining ingredients then cook on low for 15 minutes. Remove from heat, cool, then blend in a processor, blender, or with an immersion blender.
  4. Melt cheese into a saucepan with all ingredients needed. Melt on low heat until smooth and melted. 
  5. Keep in mind, all spices are a guideline only. Experimentation and adjustments are encouraged to your liking!
  6. Whisk together all ingredients for the crema, set aside. 
  7. Assemble tlayuda, first spread beans all over, then cheese, tomatoes, chorizo, avocado, dollop of cream, onions, and you’re ready to eat!
