Cuban Plantain Nachos with Spicy Guacamole

Nacho Ingredients

  • 2 teaspoons neutral tasting oil (refined coconut oil or safflower)
  • ½ can (15 oz) black beans, rinsed
  • ½ teaspoon dried oregano
  • ¼ teaspoon sea salt



Guacamole Ingredients

  • 2 avocados, peeled
  • 1 tablespoon brown onion, finely chopped
  • 1 Fresno pepper, finely diced
  • ¼ – ½ teaspoon spicy hot sauce, plus more as desired
  • ¼ teaspoon sea salt
  • 2 tablespoons lime juice
  • 1 organic Roma tomato, seeded and diced


  1. Pre-heat oven to 375°.
  2. Heat a small pot over medium heat and add oil.  Add beans, oregano and salt and cook for about 3 minutes, or until warmed through. Set aside.
  3. Place plantain chips on a baking sheet and sprinkle evenly with Follow Your Heart Mozzarella Cheese. Bake about 5-7 minutes, or until cheese is melted.
  4. Meanwhile, for spicy guacamole, in a large mixing bowl mash avocados. Add onion, Fresno pepper, desired amount of hot sauce, sea salt, lime, and tomatoes. Fold to incorporate.
  5. Remove chips from oven when warm and top with black beans. Add  generous scoops of spicy guacamole and drizzle with hot sauce and sour cream. Serve warm.
