Grilled Tofu w/ Rajas and Spicy Adobo Sour Cream

14 oz Marinated firm Tofu (I prefer Wildwood or Trader Joes- you can sub for plain tofu)

2 Pasilla Chiles

1 ear Corn

2-3 Heirloom tomatoes

1 tbsp Cilantro, chopped

Canned Chiles in Adobo

1/2 Cup Follow Your Heart Dairy-Free Sour Cream

2 Fresh Limes

1/2 Avocado, sliced

1/4 cup Vegenaise

1 Tsp Agave syrup

Sea salt to taste

1/2 cup Olive oil

2 tbsp Canola oil



Spicy Sour Cream Adobo:

  1. Blend 1-2 canned chiles in adobo in a blender until smooth
  2. Combine and whisk until smooth:
    1. 1 tbl of the blended chile mixture
    2. ½ cup Follow Your Heart Dairy-Free Sour Cream
    3. Pinch of salt
    4. 1 tsp fresh lime juice
  3. Taste and add additional chile based on desired heat level- set sauce aside in refrigerator

Roasted Corn Salsa:

  1. Heat 2 tbsp of canola oil in a pan
  2. Cut the corn off the cob, and blister it in the hot oil until it has a nice brown color (2-5 mins)
  3. Set corn aside in a medium-sized bowl to cool
  4. Once the corn is cool, Dice tomatoes and add to the bowl
  5. Chop 1 tbsp of cilantro and add to the bowl
  6. Add sea salt to taste and a generous squeeze of fresh lime juice
  7. Toss the salsa gently, taking care not to crush the tomatoes

Tofu Marinade/Sauce:

  1. Add to a bowl and whisk until blended:
    1. Juice of 1 lime
    2. ¼ cup Vegenaise
    3. ½ cup olive oil
    4. Pinch of salt
    5. Teaspoon of agave syrup
    6. 1 clove chopped garlic

Grilled Tofu:

  1. Dunk tofu in the marinade and place on a hot grill
  2. Allow grill marks to develop and then flip once (2-3 mins per side)
  3. When the tofu is done cooking, place it in a shallow dish and pour a generous portion of the marinade over it, coating each side.



  1. Heat 2 tbs of canola oil in a pan on high heat
  2. Slice Rajas into thin strips lengthwise
  3. Blister them in the hot oil until browned and slightly soft (2-3 mins), then set aside



  1. With a slotted spoon, place a generous portion of corn salsa on the plate
  2. Balance a piece of tofu on top
  3. Add a layer of Rajas and garnish the top with sliced avocado
  4. Drizzle Spicy Sour Cream Adobo over the top and enjoy!
