Watermelon Feta Salad

  • 6lb watermelon, cut into 1-inch cubes (about 8 cups)
  • 1 cup Follow Your Heart Dairy-Free Feta Crumbles
  • 1/2 cup extra virgin olive oil
  • 3 tbsp lemon juice
  • 3/4 cup mint leaves, chopped, plus more for garnish
  • salt, to taste
  • fresh ground black pepper, to taste


  1. In a large bowl, mix watermelon, Dairy-Free Feta Crumbles, olive oil, lemon juice, and mint together. Add salt and pepper, stir to combine. Taste and adjust seasoning
  2. Diving amongst 4 bowls, top with additional mint leaves and Feta Crumbles, as desired.
