Heat non-stick sauté pan and cook bacon until crisp. Set aside.
Spread Vegenaise on each slice whole grain bread. Place bread on large pan, plain side face down for 1 minute. Flip and generously sprinkle 4 slices with Dairy-Free Finely Shredded Cheddar. Enclose with remaining slices. Cover to steam for about 2 minutes. Uncover and flip, griddling bread until golden and cheese is melted.
Remove grilled cheese from pan and gently peel apart. Add a few slices bacon, tomato and lettuce to each sandwich and enclose. Slice in half and serve warm.
