Cheesy Spinach Tombstone Pizza Pockets
INGREDIENTS
- 2 packages fresh pizza dough
- 6 oz baby spinach, chopped
- 1 tsp minced garlic
- salt to taste
- 1 tub (8 oz) Follow Your Heart Dairy-Free Cream Cheese
- 1 package (7 oz) Follow Your Heart Dairy-Free Finely Shredded Mozzarella
- 1 tbsp plant-based butter, melted
- 1 cup marinara sauce for serving
INSTRUCTIONS
- In a large pan over medium heat, sauté spinach with minced garlic. Season with salt to taste. Set aside to cool.
- In a bowl, mix in sauteed spinach with Dairy-Free Cream Cheese. Add Dairy-Free Finely-Shredded Mozzarella and mix in. Cover and set in refrigerator until ready to use.
- Roll out pizza dough so it’s about ¼ inch thick. Cut the dough in rectangular pieces large enough to place into each tombstone in the pre-oiled pan.
- Fill each tombstone with the cheesy spinach filling and top with more Dairy-Free Finely Shredded Mozzarella.
- Fold over the ends of the dough to seal the pizza pockets and brush with plant-based butter on top.
- In preheated oven at 375° F, bake for 25-30 minutes until golden.
- Serve with a side of marinara sauce and enjoy!
