Chickpea Toona Melt
INGREDIENTS
- 1 baguette or any bread loaf of choice
- 1 ½ tbsp dairy-free butter
- 1 ½ tbsp neutral tasting oil
- 300g sliced white or yellow onions
- 500g cooked chickpeas (if using canned chickpeas, let them soak in hot water for 15 minutes before using)
- 3 tbsp Follow Your Heart Original Vegenaise
- 3 tbsp marinated sweet peppers
- 1 ½ tbsp capers
- 2 tbsp red wine vinegar
- 5g finely chopped seaweed
- 2 tbsp light soy sauce
- 1 tsp black pepper
- 1 tbsp lemon juice
- salt to taste
- 1 pack Follow Your Heart Dairy-Free Smoked Gouda Style Slices
INSTRUCTIONS
- Cook the sliced onions in butter and oil on medium-low heat until the onions caramelize. This should take about 20-30 minutes. Once caramelized, transfer them to a cutting board and chop them.
- In a large mixing bowl, mash the chickpeas, add in the caramelized onions then mix in all of the remaining ingredients, except for the Dairy-Free Smoked Gouda and baguette.
- Cover the bowl and let the mixture sit in the fridge for 30 minutes to allow the ingredients to meld together.
- Slice the bread and toast it on both sides in a pan or toaster, then add a generous amount of the chickpea mixture on top along with a slice of the Dairy-Free Smoked Gouda.
- You can use on of the following methods to melt the gouda: Use a torch; Place it in the oven or toaster oven at 375 F for 10 minutes or until it has reached the desired melt; Place it in the air-fryer at 400 F for 4-5 minutes.
