Croque Monsieur
INGREDIENTS
Bechamel Sauce:
- ¼ cup unsalted plant-based butter or margarine
- ¼ cup all-purpose flour
- 1 ½ cup non-dairy milk
- 1/8 cup ground nutmeg
- 2 tbsp Dijon mustard
- salt and pepper to taste
Sandwich:
- 8 slices white or country bread (not sourdough or whole wheat)
- 8 slices vegan ham
- 7oz Follow Your Heart Dairy-Free Finely Shredded Mozzarella
- ½ cup Follow Your Heart Dairy-Free Parmesan Grated
INSTRUCTIONS
- Melt butter in a saucepan over medium heat. Add in flour and cook, whisking constantly, for about 3 minutes.
- Add non-dairy milk slowly, stirring throughout. Remove from heat, add nutmeg, and Dijon mustard. Stir and cook until frothy, about 5 minutes. Add salt and pepper to taste. Set aside.
- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- Assemble sandwiches by spreading 4 slices of bread with bechamel, top with vegan ham, about ¼ cup Mozzarella, and top slices of bread. Spread more bechamel on top slices of bread, sprinkle with remaining Mozzarella. Top with Parmesan and place in oven.
- Bake at 425°F for 12-18 minutes, until cheese is melted and browned.
