Dairy-Free Queso Dip
INGREDIENTS
- 2 tbsp dairy-free margarine or butter
½ medium onion, minced
2 cloves garlic, minced
1 anaheim (mild), jalapeño (hot) or serrano pepper (hotter), seeded and finely diced
1 ½ cup dairy-free milk
1 8oz package Follow Your Heart Dairy-Free Cream Cheese
2 7oz packages Follow Your Heart Dairy-Free Finely Shredded Cheddar
1 medium tomato, diced
- Salt and pepper, to taste
Pico de gallo, for garnish
INSTRUCTIONS
- Melt butter in a large, non-stick or cast-iron skillet over medium heat.
- Add onions, garlic, and peppers to skillet and sautee, stirring occasionally, until fragrant and onions are translucent, about 3 minutes
- Add milk and cream cheese to skillet. Cook while stirring continuously until cream cheese has melted, about 7 minutes.
- Add cheese in handfuls, stirring continuously. Once cheese has completely melted, reduce heat to medium-low.
- Stir tomatoes into skillet and remove from heat. Stir in salt and pepper, to taste. Adjust seasonings as necessary.
- Top with a sprinkle of pico de gallo and serve with tortilla chips, warm tortillas, or veggies!
