Feta Tzatziki Burger
INGREDIENTS
Feta Tzatziki
- 1 cup Follow Your Heart Dairy-Free Sour Cream
- ½ cup Follow Your Heart Dairy-Free Feta Crumbles
- 2/3 cup grated cucumber
- 3 garlic cloves (minced)
- 1 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tbsp fresh dill (chopped)
- 1 tbsp fresh mint (chopped)
- salt and pepper to taste
Burger Patties
- 1 pound vegan ground beef
- 2 – 3 cloves garlic (minced)
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp ground coriander
- pinch of cinnamon
- 2 tbsp fresh mint (chopped)
- 2 tbsp fresh basil (chopped)
- 1 tbsp fresh dill (chopped)
- salt and pepper to taste
INSTRUCTIONS
- To make the Feta Tzatziki, grate the cucumber (1/2 a large cucumber should be about 2/3 cup once grated) and add it to a bowl along with a pinch of salt, stir to mix and let the salt draw out the moisture for about 10 minutes. Then add the cucumber to a paper towel and gently squeeze out all the excess liquid. Get them as dry as possible.
- After that simply combine everything in a bowl to make the Feta Tzatziki and adjust for seasoning.
- To make the burger patties, simply combine the vegan beef and everything else in a bowl. Form them into patties (4 oz) and then grill them over medium high heat for about 2-3 minutes or until well browned, then flip and grill for another 2 – 3 minutes.
- Assemble burger with whatever toppings you like, lettuce, tomato and pickled onions are divine, but the burger would be great with just the Feta Tzatziki and Patty too, so enjoy!
