Gyro Smash Tacos
INGREDIENTS
- 8 oz vegan ground beef
- 2 tbsp chopped parsley
- 2 tsp ground cumin
- 1 tsp granulated garlic
- 1 tsp smoked paprika
- ½ tsp ground coriander
- ½ tsp dried oregano
- ⅛ tsp ground cinnamon
- ⅛ tsp pepper
- 2 tsp light oil, divided
- 2 6-inch flour tortillas
- ½ cup shredded romaine lettuce
- ½ cup seeded, diced tomato, divided
- 1 tbsp diced red onion, divided
- 4 tsp Follow Your Heart Dairy-Free Feta Crumbles, divided
Tzatziki Sauce:
- ¼ cup Follow Your Heart Original Vegenaise
- ¼ cup peeled, seeded, shredded cucumber, water squeezed out
- ½ clove garlic, grated
- 1 tsp chopped dill
- 1 tsp chopped mint
- 1 tsp lemon juice
INSTRUCTIONS
- Into a small mixing bowl, add Vegenaise, cucumber, garlic, dill, mint, and lemon juice. Mix to combine, and cover and refrigerate until ready to use.
- Into a mixing bowl add vegan beef, parsley, cumin, garlic, paprika, coriander, oregano, cinnamon, and pepper. Mix to combine.
- Divide mixture in half, and form into two large meatballs.
- Heat wide skillet or griddle to medium heat.
- Add ½ teaspoon oil, and a meatball. Immediately place tortilla atop ball, and press down with spatula to flatten meat so it spreads to edges of tortilla. Cook 2 to 3 minutes until browned.
- Remove from pan and set aside.
- Wipe out pan, add ½ teaspoon oil.
- Place taco in pan, tortilla-side down, and cook 1 to 2 minutes until browned and slightly crisp. Repeat with remaining portion.
- Transfer to plate, and top each with sauce, lettuce, tomato, onion, and Dairy-Free Feta Crumbles. Roll into a cone and wrap with parchment or fold like a taco. Serve immediately.
