Herbed Cheezy Latkes
INGREDIENTS
- 2 tbsp Follow Your Heart VeganEgg powder
- ½ cup ice cold water
- 6 medium russet potatoes, grated
- 1 yellow onion, grated
- 2 tbsp matzo meal or panko breadcrumbs
- 1 cup Follow Your Heart Dairy-Free Finely Shredded Cheddar
- 1/3 cup chopped fresh herbs, such as oregano, thyme, and sage
- salt and black pepper
- safflower or other oil for frying
- fresh chopped chives or herbs, for serving
- Follow Your Heart Dairy-Free Sour Cream and apple sauce, for serving
INSTRUCTIONS
- Whisk VeganEgg powder with ice cold water. Mix well. Set aside.
- Place the potatoes and onion in a large kitchen towel or strainer and squeeze out any excess liquid. Add to a large mixing bowl along with the matzo meal/breadcrumbs, VeganEgg mix, Finely Shredded Cheddar, herbs, and a large pinch each of salt and pepper. Mix to evenly combine.
- Heat a thin layer of oil in a large skillet over medium heat. When the oil shimmers, scoop about 1/4 cup of the potato mix and add to the pan, flattening down with a spatula. Work in batches of 3-4 and cook 4-5 minutes per side or until deeply golden brown and crisp. Transfer to a plate lined with paper towels to soak up the excess oil.
- Serve immediately with Dairy-Free Sour Cream and applesauce.
