Loaded Party Nachos
INGREDIENTS
Vegan White Queso:
- 1 cup plant based milk
- 2 cups Follow Your Heart Dairy-Free Mozzarella Cheese Shreds
- ¼ tsp cumin powder
- 1 tsp fresh lime juice
Toppings:
- ¼ cup oil of choice
- ½ cup Diced Red Onions
- 1 cup Diced Red Bell Pepper
- 1 cup Diced Green Bell Pepper
- 2 tbsp Fajita Seasoning
- 2 tbsp Herbed Poultry Seasoning
- ½ tbsp Smoked Paprika
- 2 cups Cooked Black Beans
- 1-6 cups Tortilla Chips
- ¼ cup Sliced Fresh Jalapeños
- ½ cup Pomegranate Seeds
- ⅓ cup Chopped Green Onion
- ½ cup Follow Your Heart Dairy-Free Feta Crumbles
INSTRUCTIONS
- In a large pan sauté diced red onions in oil until slightly translucent and soft.
- Add in diced red and green bell peppers and season the vegetables with fajita seasoning, poultry seasoning, and smoked paprika. Cook the vegetables in the pan for 3-6 minutes or until they are softer.
- Mix the cooked black beans into the seasoned vegetables and cover them in the seasoning and spices. Let this cook together on low heat as you make the white queso.
- In a pot add in plant-based milk and heat it up until it’s almost boiling.
- Next add in Follow Your Heart Dairy-Free Mozzarella Cheese Shreds into the hot milk and whisk everything together until the cheese is melted down and looks like queso cheese. Add in more plant-based milk if needed.
- Season the queso with cumin powder and fresh lime juice, mix it in and set aside the queso covered on medium heat until ready to build the nachos.
- Build the nachos by first laying down the tortilla chips on a platter, then the cooked beans and vegetables, cover them in white queso cheese sauce, and garnish the nachos with sliced jalapeños, pomegranate seeds, green onion and top the nachos with Follow Your Heart Dairy-Free Feta Crumbles
