Zucchini, Squash, Corn, Pepper Quesadillas
INGREDIENTS
- 2 tbsp extra virgin olive oil
- 1 large zucchini, diced into ¼ inch quarter moons
- 1 cup frozen sweet corn
- ½ red bell pepper, diced
- 2 tsp dried oregano
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp granulated garlic
- salt and pepper, to taste
- 7 oz Follow Your Heart Dairy-Free Finely Shredded Cheddar
- 7 oz Follow Your Heart Dairy-Free Finely Shredded Mozzarella
- 1 jalapeño, thinly sliced (optional)
- 4 fajita-sized flour tortillas
- Follow Your Heart Dairy-Free Sour Cream, to serve (optional)
- Guacamole, to serve (optional)
INSTRUCTIONS
- Heat olive oil over medium heat in a large skillet
- Add frozen corn, and cook stirring about 2 minutes
- Add zucchini, bell pepper, spices, and seasoning. Cook, stirring occasionally, until soft and fragrant, about 7 minutes
- Add salt and pepper, taste, and adjust seasoning. Remove from heat and set aside.
- In a large bowl, mix together both flavors of cheese. Using the same skillet, increase heat to medium-high, add 1 tortilla and sprinkle ¼ of cheese on half the tortilla. Top cheese with ¼ cup of veggie mixture. Close and cook until cheese is melted, flipping halfway through, about 4 minutes per side.
- Repeat step 5 with remaining tortillas. Serve with diced jalapeño, guacamole, and Dairy-Free Sour Cream.
