Ultimate Breakfast Sandwich
INGREDIENTS
Tofu Egg:
- 1 (14-ounce) container extra-firm tofu, drained and pressed
- 2 tsp freshly squeezed lemon juice
- ¼ tsp sea salt
- ¼ tsp freshly ground black pepper
- ¼ tsp ground turmeric
- 2 tsp vegan butter
Secret Sauce:
- 3 tbsp ketchup
- 3 tbsp Follow Your Heart Original Vegenaise
- 1 tsp freshly squeezed lemon juice
- 1 tsp maple syrup
- 1 tbsp nutritional yeast
- ⅛ tsp sea salt
- ⅛ tsp freshly ground black pepper
- 6 vegan English muffins, split
- 6 Follow Your Heart Dairy-Free American Cheese Slices
- 1 tomato, cut into ¼-inch-thick rounds
- 1 avocado, peeled and cut into thin strips
INSTRUCTIONS
- To prepare the Tofu Egg: Cut tofu block in half and cut into 6 (¼-inch-thick) rectangles. Place tofu on a plate and drizzle both sides of tofu with lemon juice, sea salt, and pepper and sprinkle with turmeric.
- Heat a griddle over medium heat and add butter.
- Cook tofu for 3 to 4 minutes per side, or until golden. Set aside.
- To prepare the Secret Sauce: In a bowl, whisk together ketchup, Original Vegenaice, lemon juice, maple syrup, nutritional yeast, sea salt, and pepper until uniform. Set aside.
- Top split side of 1 English muffin with 1 slice Dairy-Free American Cheese. Toast in toaster oven for 5 to 7 minutes, or until golden. Spread secret sauce on split side of bare muffin half.
- Place 1 piece tofu, 1 slice tomato, and a few avocado slices on top of cheesy side. Top with secret sauce muffin side. Repeat for all sandwiches. Serve warm.
