Vegan Bleu Cheese Mashed Potatoes
INGREDIENTS
- 3 pounds potatoes (russet or yukon gold)
- 1/2 cup (1 stick) vegan butter
- 1/2 – 1 cup unsweetened plant milk
- 2 – 3 cloves garlic (minced)
- 1 cup Follow Your Heart Dairy-Free Bleu Cheese Crumbles
- Salt & pepper to taste
INSTRUCTIONS
- Peel the potatoes and wash them. Cut them into equal sized pieces (I like to cut them into 1 oz chunks).
- To cook you can either boil them by adding them to a large pot of salted cold water and bring that up to a boil. Cook them for 10 – 15 minutes or until fork tender. Drain and add them back to the pot and cook them on medium low to get rid of any excess moisture.
- To steam the potatoes, add them to a steamer basket and steam them for about 25 – 35 minutes or until fork tender.
- In a saucepan over medium heat, melt the vegan butter and then add the minced garlic. Cook the garlic for 1 minute, then add in the unsweetened plant milk, bring to a light boil then remove from the heat.
- Mash or rice the potatoes, then add in the milk and butter mixture along with the Dairy-Free Bleu Cheese Crumbles. Fold gently, adding more hot milk or melted butter as desired. Top with more Dairy-Free Bleu Cheese Crumbles.
- Serve immediately and enjoy!
