Preheat oven to 350ºF, then place the tortilla on a baking sheet for 5-10 minutes or until toasted.
Combine all seasonings with a mortar and pestle until fine, then add to the crumbled tofu. Mix until incorporates then pan-fry in a skillet with 3 tbsp melted butter for 15 minutes on medium heat.
For the beans, sauté onions until translucent then add garlic, mix thoroughly then add spices and beans. Combine the remaining ingredients then cook on low for 15 minutes. Remove from heat, cool, then blend in a processor, blender, or with an immersion blender.
Melt cheese into a saucepan with all ingredients needed. Melt on low heat until smooth and melted.
Keep in mind, all spices are a guideline only. Experimentation and adjustments are encouraged to your liking!
Whisk together all ingredients for the crema, set aside.
Assemble tlayuda, first spread beans all over, then cheese, tomatoes, chorizo, avocado, dollop of cream, onions, and you’re ready to eat!
