Waffle Grilled Cheese
- 1 bottle Follow Your Heart Rocket Cakes
- 1 cup Follow Your Heart Dairy-Free Finely Shredded Cheddar
- 1 tablespoon vegan butter, plus more for greasing pan
- 4 strips vegan bacon
- Heat small pan and add butter. Add bacon and cook until golden, about 2 minutes per side. Roughly chop and set aside.
- Heat waffle iron. Use recommended amount of batter for each waffle according to iron, leaving slight border around edge. Close lid. Cook until golden brown on a number 4 setting, about 3-5 minutes. Let cool slightly.
- Heat sauté pan and grease with additional butter. Add waffle and top with ½ cup Dairy-Free Finely Shredded Cheddar. Top with bacon and enclose. Cook covered to melt cheese, about 2 minutes. Flip and cook 2 more minutes. Serve warm.
