5-Minute Vegan Meyer Lemon Curd




  • Mesh sieve
  • Blender
  • Microwavable bowl


  1. Prepare VeganEgg (mixing in the blender is optional)
  2. In a microwavable bowl, coming vegan margarine, lemon juice, sugar, and lemon zest. Microwave for 1 minute, stir to combine.
  3. Pour prepared VeganEgg and lemon mixture into blender, blend until smooth.
  4. Immediately pour mixture through sieve into container. Refrigerate for a minimum of two hours.
  5. Serve in your preferred method (Marina served on blueberry aquafaba meringue nests!)
