5-Minute Vegan Meyer Lemon Curd

- 1 Follow Your Heart® VeganEgg, prepared as directed
- Zest of 1 Meyer lemon
- Juice of 1 Meyer Lemon
- 3 tbsp Vegan Margarine
- 1/4 cup sugar
- Mesh sieve
- Microwavable bowl
- Prepare VeganEgg (mixing in the blender is optional)
- In a microwavable bowl, coming vegan margarine, lemon juice, sugar, and lemon zest. Microwave for 1 minute, stir to combine.
- Pour prepared VeganEgg and lemon mixture into blender, blend until smooth.
- Immediately pour mixture through sieve into container. Refrigerate for a minimum of two hours.
- Serve in your preferred method (Marina served on blueberry aquafaba meringue nests!)
