Banana Cream Pie Parfait

Banana Cream Ingredients:
- 2 bananas, peeled
- 3 tbsp evaporated cane sugar
- 2 tbsp maple syrup
- 2 containers Follow Your Heart Dairy-Free Vanilla Bean Yogurt
- 1 container Follow Your Heart Dairy-Free Plain Yogurt
- Zest of half a lemon
- ½ tsp vanilla extract
- 1/8 tsp sea salt
Topping Ingredients:
- 1 cup vanilla wafer or cinnamon cookies, crushed
- 1 can coconut whipped cream
- 2 bananas, sliced into thin rounds
Instructions
- In a blender, combine bananas, sugar, maple syrup, Follow Your Heart Vanilla Bean Yogurt, Follow Your Heart Plain Yogurt, lemon zest, vanilla extract, and sea salt.
- In a food processor, add cookies and pulse until crumbly.
- To layer parfaits add a few tbsp cookie crumbs into 4 glasses or bowls. Top with about ½ cup banana cream, a few slices banana, whipped cream, additional cookie crumbs, another small layer of banana cream, banana, whipped cream, and cookies.
