Elote Avocado Dip


Buttery Corn

  • 3 cups Corn Kernels (canned or from the Cob)
  • 3 tbsp vegan butter
  • 1-3 tbsp diced serrano or jalapeño pepper
  • 1 tbsp minced garlic
  • 1 tsp pink Himalayan salt

Chili Mayo Mixture

  • 4 tbsp Follow Your Heart Avocado Oil Vegenaise
  • 1/8-½ tsp cayenne pepper
  • 2 tsp chili powder
  • 1.5 tbsp lime juice

Gorgeous Guacamole

  • 3-5 ripe avocados
  • 1/3 red onion, diced
  • 2-3 tbsp minced jalapeño
  • 4 tbsp lime juice
  • 1/3 cup minced fresh cilantro
  • ½-1.5 tbsp pink Himalayan salt


  1. In a pan, melt your vegan butter, then add your garlic, salt, and corn kernels.
  2. Once the garlic starts to sauté down, add in your diced serrano or jalapeño pepper and sauté everything together.
  3. Cook everything in the pan until the corn is golden brown. Remove from heat and set aside.
  4. Make your Gorgeous Guacamole by removing the pits (keep the pits for storing the guacamole later!!!) from the avocados, spooning out the avocados into a large bowl, adding in all of your other guacamole ingredients, and mashing the ingredients together until smooth. (I suggest doing this with a potato masher!) Taste and add in more salt if necessary.
  5. Add the avocado pits back into your Gorgeous Guacamole to keep it fresh and then place it in the fridge until you assemble the dip later.
  6. In a medium bowl, combine your ingredients for your Chili Mayo Mixture until everything is incorporated.
  7. In that same bowl, add your Buttery Corn to the Chili Mayo Mixture until all the corn is coated and covered. Set aside your Elote.
  8. Build your Elote Avocado Dip in a glass pan or shallow bowl.
  9. Start by adding your Gorgeous Guacamole to the glass pan and spread it out until it is flat on top. Add your Elote on top of the Gorgeous Guacamole and spread it out until it is flat on top. (Try not to press the Elote down too far. Don’t let the Elote sink into the Gorgeous Guacamole!!)
  10. Sprinkle over some Follow Your Heart Dairy-Free Feta Crumbles on top of the Elote.
  11. Drizzle over some optional Valentina
  12. Top it off with fresh cilantro and end with a sprinkle of some more Follow Your Heart Dairy-Free Feta Crumbles.
  13. Feast, sing, and enjoy!
