No Bake Key Lime Pie


Crust Ingredients

  • 1 box (7.5 oz) vegan animal cookies
  • ¼ cup vegan butter, softened
  • ½ tsp vanilla extract
  • 1/8 tsp sea salt

Filling Ingredients

  • 1 can (11.25 oz) condensed coconut milk
  • 2 containers Follow Your Heart Dairy-Free Cream Cheese (8 oz)
  • ¼ cup lime juice, plus zest of 2 limes and for garnish
  • 1/8 tsp sea salt
  • Vegan whipped cream *Optional for topping

Instructions

  1. To a food processor add cookies, butter, vanilla, and salt. Pulse until uniform
  2. Press cookie crust into 9-inch pie pan. Set aside in refrigerator
  3. To a standing mixer add condensed coconut milk, Follow Your Heart Dairy-Free Cream Cheese, lime juice and zest, and salt. Whip until uniform
  4. Gently spread filling into crust and top with a sprinkle of extra lime zest if desired
  5. Refrigerate for 4 hours or overnight. Top with whipped cream if desired before serving
