No Bake Key Lime Pie

Crust Ingredients
- 1 box (7.5 oz) vegan animal cookies
- ¼ cup vegan butter, softened
- ½ tsp vanilla extract
- 1/8 tsp sea salt
Filling Ingredients
- 1 can (11.25 oz) condensed coconut milk
- 2 containers Follow Your Heart Dairy-Free Cream Cheese (8 oz)
- ¼ cup lime juice, plus zest of 2 limes and for garnish
- 1/8 tsp sea salt
- Vegan whipped cream *Optional for topping
Instructions
- To a food processor add cookies, butter, vanilla, and salt. Pulse until uniform
- Press cookie crust into 9-inch pie pan. Set aside in refrigerator
- To a standing mixer add condensed coconut milk, Follow Your Heart Dairy-Free Cream Cheese, lime juice and zest, and salt. Whip until uniform
- Gently spread filling into crust and top with a sprinkle of extra lime zest if desired
- Refrigerate for 4 hours or overnight. Top with whipped cream if desired before serving
