Perfect Pasta Salad


Ingredients

Perfect Pasta Salad

  • 4 cups gluten-free noodles, cooked and cooled
  • 1 cup chickpeas, cooked and cooled
  • 1 cup black beans, cooked and cooled
  • 1 cup rainbow tomatoes, cooked and cooled,
  • ½ red onion, diced
  • 1 cup olives
  • 1 cup cucumber, chopped
  • 1 cup yellow bell pepper, chopped
  • ½ cup fresh basil, chopped
  • ½ cup Follow Your Heart Dairy-Free Shredded Parmesan

Zesty Herb Dressing

  • 1 cup oil or aquafaba (water from canned chickpeas)
  • ¼ cup apple cider vinegar
  • ½ – 1 tbsp maple syrup
  • 1 ½ tbsp minced garlic
  • 1 tsp ground mustard
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • ½ tsp dried red chili flake
  • ¼ – ½ pink Himalayan salt
  • ¾ tbsp black pepper
  • 1 tsp Italian seasoning
  • 1 tsp dried oregano
  • 2 tsp dried parsley
  • 2 tsp dried basil

Instructions

  1. Cook gluten-free noodles al dente or a little bit form. Cool with cold water, drain, and set aside.
  2. In a medium bowl, mix together all ingredients for Zesty Herb Dressing and set aside.
  3. In a large bowl, combine all vegetables and beans.
  4. Add in pasta to large bowl, stir to combine. Add in Zesty Herb dressing and half the Parmesan. Stir to combine
  5. Garnis with more fresh basil and remaining Parmesan. Enjoy!
