Perfect Pasta Salad
Ingredients
Perfect Pasta Salad
- 4 cups gluten-free noodles, cooked and cooled
- 1 cup chickpeas, cooked and cooled
- 1 cup black beans, cooked and cooled
- 1 cup rainbow tomatoes, cooked and cooled,
- ½ red onion, diced
- 1 cup olives
- 1 cup cucumber, chopped
- 1 cup yellow bell pepper, chopped
- ½ cup fresh basil, chopped
- ½ cup Follow Your Heart Dairy-Free Shredded Parmesan
Zesty Herb Dressing
- 1 cup oil or aquafaba (water from canned chickpeas)
- ¼ cup apple cider vinegar
- ½ – 1 tbsp maple syrup
- 1 ½ tbsp minced garlic
- 1 tsp ground mustard
- 1 tbsp garlic powder
- 1 tbsp onion powder
- ½ tsp dried red chili flake
- ¼ – ½ pink Himalayan salt
- ¾ tbsp black pepper
- 1 tsp Italian seasoning
- 1 tsp dried oregano
- 2 tsp dried parsley
- 2 tsp dried basil
Instructions
- Cook gluten-free noodles al dente or a little bit form. Cool with cold water, drain, and set aside.
- In a medium bowl, mix together all ingredients for Zesty Herb Dressing and set aside.
- In a large bowl, combine all vegetables and beans.
- Add in pasta to large bowl, stir to combine. Add in Zesty Herb dressing and half the Parmesan. Stir to combine
- Garnis with more fresh basil and remaining Parmesan. Enjoy!
