Roasted Caesar Potatoes

Ingredients
- 4-6 organic russet potatoes, large dice
- 1 tbsp safflower oil (or refined coconut oil)
- 3 tbsp Follow Your Heart Organic Vegan Caesar Dressing, plus for dipping
- 1 tbsp lemon juice
- ½ tsp sea salt
- ¼ tsp finely ground black pepper
- ½ tsp smoked paprika
- ¼ cup capers, drained
- 1/3 cup Follow Your Heart Dairy-Free Parmesan Shredded
- 2 tbsp fresh parsley, finely chopped
Directions
- Pre-heat the oven to 450°F
- Add steamer basket to pot with 1-inch water and heat over medium. Add potatoes. Steam for 5 minutes, to par-cook. Remove from steamer and place in large bowl
- In a small mixing bowl, add oil, Follow Your Heart Organic Vegan Caesar Dressing, and lemon juice. Whisk until uniform and set aside
- Add Caesar mixture to potatoes and toss to coat. Add salt, pepper, and paprika and toss until uniform. Fold in capers and spread on walled, greased baking sheet.
- Roast for about 20 minutes, and top with Follow Your Heart Dairy-Free Parmesan Shredded. Roast for an additional 5-8 minutes, or until pierced easily with fork, depending on thickness of potatoes
- Serve warm topped with parsley with extra Caesar on side for dipping.
