Roasted Chickpea Salad




  1. Heat oven to 375°F. Drain chickpeas. In a large bowl, combine spices, olive oil, and chickpeas until coated. Transfer to a lined baking sheet. Bake for 15-20 minutes or until browned. Set aside for a few minutes to cool.
  2. While chickpeas are baking, make kale salad. Chop kale and add to a large bowl, add lemon juice and dressing. Massage kale until coated with dressing. Add mozzarella and mix. Top with chickpeas, extra lemon juice and
