Vegan Ham & Cheese Scones


Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ cup very cold vegan butter
  • ¾ cup plain unsweetened soymilk + 1 tsp apple cider vinegar
  • 1 cup Follow Your Heart Dairy-Free Cheddar Shreds
  • 1/3 – ½ cup vegan ham, cubed
  • 2 tbsp chives

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper and set aside
  2. In a measuring cup, add your soymilk and apple cider vinegar, stir and let sit for 10 minutes to create buttermilk
  3. In a large bowl, add your flour, sugar, baking powder, garlic powder, and Mix to combine. Cube your cold butter and add to the flour and cut in using a pastry cutter (you can also do this in a food processor, just avoid using your hands so the butter doesn’t start to melt) until it resembles coarse crumbs.
  4. Stir in your buttermilk, cheese, ham, and chives until a soft dough forms
  5. Working on a lightly floured surface, knead the dough 3-4 times just until it comes together. Using a rolling pin (that’s chilled), roll the dough into an 8” circle that’s roughly 1” thick. Cut into 8 wedges
  6. Place the scones on the baking sheet with a little space between each one, and place into your 425°F preheated oven for 20-30 minutes until firm to the touch or lightly browned
  7. Serve with extra butter, and/or brush melted butter over the top when they come out of the oven
