Vegan Peach Cobbler Tartine

Peach Ingredients:
- 2 tbsp vegan butter
- 3 cups sliced peaches, fresh or frozen
- ½ tsp ground cinnamon
- 1 tsp vanilla extract
- 1/8 tsp nutmeg or mace
- 1/3 cup evaporated cane sugar
- ¼ tsp sea salt
Cream Cheese Ingredients:
- 1 cup Follow Your Heart Dairy-Free Cream Cheese
- ¼ tsp ground cinnamon
- 2 tsp evaporated cane sugar
Grilled Bread Ingredients:
- 2 tbsp vegan butter
- 6 thick slices organic white bread
- 2 tsp evaporated cane sugar
- ¼ tsp ground cinnamon
Instructions
- Heat a sauce pot over medium heat and add vegan butter, peaches, cinnamon, vanilla, nutmeg, sugar, and salt. Cook, stirring occasionally, about 8-10 minutes, or until liquids release and become slightly thick. Set aside.
- In a separate bowl combine cream cheese, cinnamon, and sugar and whisk. Place in piping bag and set aside.
- Heat a griddle over medium heat and add vegan butter. Sprinkle griddle with cinnamon and sugar and then top with bread. Griddle on first side, about 3 minutes, or until golden. Flip and griddle remaining side.
- To serve, slice griddled bread into triangles and top generously with peaches in syrup. Swirl on cream cheese mixture using piping bag. Serve warm.
