Watermelon Bruschetta


Ingredients

French Bread Crostinis:

  • 1 loaf of French Bread (or 2 French baguettes) sliced 3/4 inch thick
  • 2-3 tbsp oil
  • 1 tsp garlic powder (1/2 tbsp minced garlic)
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp paprika

Watermelon Bruschetta:

  • 3 cups finely diced watermelon
  • 2/3 cup finely diced shallot
  • 2 tbsp sliced green onions
  • 2 tbsp fresh parsley (2 tsp dry)
  • 2 tbsp oil (optional)
  • 1 1/2 tbsp finely sliced chives
  • 2 tsp black sesame seeds (optional)
  • 1 tsp fresh basil (1/2 tsp dry)
  • 1 tsp balsamic vinegar
  • 1 tsp salt
  • 1 tsp dry oregano
  • 1/2 tsp pepper

French Bread Crostinis:

  1. Preheat oven to 425°F.
  2. Slice bread, then place on a baking sheet.
  3. Combine the oil and seasonings, then proceed to lightly brush each slice of bread on only one side.
  4. Transfer to the oven for 8 to 10 minutes, until golden brown. Set aside.

Bruschetta:

  1. Combine all of the watermelon bruschetta together in a mixing bowl and mix well.

To assemble:

  1. Spread cream cheese onto each crostini.
  2. Using a strainer, get rid of the extra liquid in the watermelon bruschetta mixture. Or, serve using a slotted spoon so the liquid can pass through before topping the cream cheese with the mixture.
  3. Top each crostini with the strained watermelon bruschetta mixture. Serve immediately.
