Watermelon Mozzarella Mint Salad

This salad is a great way to cool down if you live somewhere with a long, drawn-out summer! It’s sweet, it’s savory, it’s filling. Super easy to make, and allergen friendly!
- 2 cups Watermelon, cubed
- 2 cups Arugula
- 3 oz Follow Your Heart New Mozzarella Block, cubed
- 3 tbsp Balsamic Vinegar
- Fresh Mint Leaves
- Extra Virgin Olive Oil, to drizzle
- salt and pepper to taste
Toss arugula in balsamic vinegar and set on a serving plate. Top arugula with watermelon, cheese cubes and drizzle with extra virgin olive oil. Season with salt and pepper to taste. Garnish with whole mint leaves and serve.
