In a large pan over medium heat, sauté spinach with minced garlic. Season with salt to taste. Set aside to cool.
In a bowl, mix in sauteed spinach with Dairy-Free Cream Cheese. Add Dairy-Free Finely-Shredded Mozzarella and mix in. Cover and set in refrigerator until ready to use.
Roll out pizza dough so it’s about ¼ inch thick. Cut the dough in rectangular pieces large enough to place into each tombstone in the pre-oiled pan.
Fill each tombstone with the cheesy spinach filling and top with more Dairy-Free Finely Shredded Mozzarella.
Fold over the ends of the dough to seal the pizza pockets and brush with plant-based butter on top.
In preheated oven at 375° F, bake for 25-30 minutes until golden.
