Game Day Roll Ups

- 1 carrot
- 4 Follow Your Heart Gluten-Free Classic Tortillas
- 1 cup Follow Your Heart Vegan Gourmet Cream Cheese, divided
- 1 small can sliced black olives
- 1/3 cup sliced pepperoncini
- 1 beefsteak or heirloom tomato, sliced
- 16 slices vegan salami
- Peel carrot using a vegetable peeler all of the way through carrot, yielding wide, yet thin strips of carrot. Set aside.
- Heat a skillet over medium heat and add oil. Add one tortilla and heat until pliable, about 10 seconds per side.
- Place tortilla on a flat surface and spread evenly with ¼ cup Follow Your Heart Vegan Gourmet Cream Cheese.
- Sprinkle tortilla evenly with olives and pepperoncini. Add a horizontal line of tomato about 1/3 from the bottom of tortilla, roll bottom of tortilla over tomato. Add a few strips carrot and salami in a horizontal line at seam. Continue to roll all of the way up.
- Trim edges slightly and place 4 toothpicks evenly throughout roll. Cut with a serrated knife, yielding 4 pieces per roll.
- Repeat for all tortillas. Serve immediately.
