Fresh Vegetable and Parmesan “Rawvioli”

“Rawvioli” Ingredients

  • 1 garnet beet
  • 1 large watermelon radish
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon sea salt

Filling Ingredients

  • 1 container medium firm tofu, pressed and drained
  • 1 teaspoon dried oregano, finely chopped
  • 2 tablespoons fresh basil, finely chopped
  • ¼ cup fresh lemon juice
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons Follow Your Heart Cream Cheese
  • ¼ cup Follow Your Heart Parmesan Shreds, plus more for garnish
  • 2 tablespoons pine nuts


  1. Slice beet and watermelon radish paper thin with mandoline slicer or by hand. Marinate in olive oil, lemon juice and sea salt until ready to use.
  2. In a large bowl, crumble tofu with hands.  Add oregano, basil, lemon juice, sea salt, pepper, Follow Your Heart Cream Cheese, and Follow Your Heart Parmesan.  Stir until well mixed.  Set aside.
  3. To serve, place small amount of filling between two pieces of beet or watermelon radish.  Place on platter and garnish with additional parmesan and pine nuts.
