Broccoli Cheddar Bake

INGREDIENTS

  • 1 cup Follow Your Heart Dairy-Free Sour Cream
  • 1 ½ cup Follow Your Heart Soy-Free Vegenaise
  • 1 ½ cup plain hummus
  • ½ cup minced white onions
  • 2 tbsp crushed garlic
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • ½ tbsp smoked paprika
  • 2 ½ tbsp poultry seasoning
  • 2 tbsp yellow mustard
  • 1 tbsp maple syrup
  • ¼-1 tsp minced chili peppers or crushed red pepper flakes
  • 5-7 cups chopped broccoli florets
  • 2 cups Follow Your Heart Dairy-Free Finely-Shredded Cheddar
  • salt and pepper to taste
  • ¼ cup vegan butter or oil
  • 1 cup Follow Your Heart Dairy-Free Shredded Parmesan
  • 1-2 cups crushed potato chips
  • 3 tbsp minced parsley

INSTRUCTIONS

  1. Heat the oven to 385° F and prepare to bake the dish.
  2. In a large bowl, combine Dairy-Free Sour Cream, Soy-Free Vegenaise, hummus, minced white onions, crushed garlic, garlic powder, onion powder, smoked paprika, poultry seasoning, yellow mustard, maple syrup, and red chili pepper flakes. Mix until all the ingredients are well combined. 
  3. Chop the broccoli into small bite-size florets and boil them in hot water for 3-6 minutes and they are a bright shade of green.
  4. Add the boiled broccoli to the large bowl of ingredients and then add in Dairy-Free Finely Shredded Cheddar, salt, and pepper to taste. Mix everything together until all the broccoli is fully covered and coated. 
  5. Lightly coat the inside of a baking dish with vegan butter on all sides so the broccoli does not burn and stick to the sides.
  6. Pour the broccoli mixture into the buttered baking dish and flatten it out so that the top is a completely even surface. 
  7. Sprinkle Dairy-Free Shredded Parmesan across the top of the baking dish. 
  8. On top of the Parmesan, sprinkle crushed potato chips all over, from corner to corner, edge to edge. 
  9. In the middle rack, bake the Cheddar Broccoli dish for 18-30 minutes or until it is bubbling all around the edges. You can finish it off by broiling the dish for just a few seconds to get the crispy golden edges on the potato chips.
  10. Remove the dish from the oven and when you are ready to serve, top it with a sprinkle of minced parsley. 
  11. Sing your song, do your dance, speak your truth, and enjoy the Cheddar Broccoli Bake!
