"Cheesy" Colcannon Bake

Ingredients

  • 2 pounds red potatoes, cut into quarters
  • 180 ml coconut creamer
  • 4 ml salt
  • 88 ml vegan butter
  • 1 small white onion, diced
  • 1 small green cabbage, finely shredded (or one 10-ounce package)
  • 120 ml Vegan Gourmet Cheddar Shreds
  • Freshly ground pepper to taste

Instructions

  1. Cook potatoes in boiling water until tender when pierced with a fork, about 15 minutes; drain well and mash with skins on, adding the creamer and salt.
  2. While potatoes are cooking, melt 5 tablespoons butter in a large skillet. Add onion; cook 10 minutes over medium heat, stirring occasionally, until very soft. Add cabbage; cook and stir for 5-10 minutes until very soft. Stir cabbage mixture and cheese into hot potatoes and season with pepper.
  3. Mound mixture in a baking dish and sprinkle cheese over top. Make a small well in the center and place under the broiler until cheese melts and potatoes are lightly browned on top, about 5-10 minutes. Remove from broiler. Place a pat of butter into well and serve so that each plate gets a serving of the delicious melted “butter”.

Italian Vegan Toastie

This classic sandwich gets an Italian twist by adding leaves of basil and sweet marinated red onions. Mangia!

 

Ingredients:

Quick Pickled Onions

  • 1 red onion, thinly sliced
  • 7 ml of sugar
  • 3.5 ml of salt
  • 60 ml of balsamic vinegar

Italian Vegan Grilled Cheese

Instructions:

To make quick pickled onions, soak onion slices in balsamic vinegar with 7 ml of sugar and 3.5 ml of salt mixed in for about an hour.

To make sandwich, coat each slice of bread with a thin layer of Vegenaise®. Place one slice, Vegenaise® side down, on a pan over medium-high heat. Sprinkle cheese evenly over bread and place another slice of bread on top, Vegenaise® side up for about 2 minutes. Peek inside and when the cheese is starting to melt, flip sandwich, open and insert tomato, basil, and quick pickled onions into sandwich. Cook until both sides are evenly browned.
